Sopapillas made with Chunky CHIPS AHOY! Cookie Pieces

Our new take on a sopapilla! This blends Chunky CHIPS AHOY! Cookie Pieces into the dough, incorporating chocolate chip cookie flavors in every bite. After frying, drizzle with honey and sprinkle with even more Chunky CHIPS AHOY! Cookie Pieces.

Ingredients

22 servings, 5 pieces each

  • Sopapilla

  • 17 oz. all-purpose flour
  • 1½ tsp. baking powder
  • ½ tsp. kosher salt
  • 1¾ oz. vegetable shortening
  • 12 oz. warm water
  • 5 oz. finely ground Chunky CHIPS AHOY! Cookie Pieces

  • Coating

  • 10½ oz. Chunky CHIPS AHOY! Cookie Pieces
  • 7½ oz. powdered sugar

  • Topping

  • 2 lb. 1 oz. honey
  • 1 lb. Chunky CHIPS AHOY! Cookie Pieces

DIRECTIONS
For Sopapilla:  

Combine flour, baking powder, salt and shortening in large bowl. Mix in water until a smooth dough is formed. Mix in finely ground cookie pieces. Cover and let stand 20 min. at room temperature.

Roll out dough on lightly floured surface to 3/8-inch thickness. Cut into 1-1/2-inch squares. Deep fry in 350ºF oil 1 to 2 min. or until golden brown on all sides. Drain. Toss in Coating while warm.

For Coating:  

Process cookie pieces and sugar in food processor until finely ground. Set aside until ready to use.

For Topping:  

For each serving, plate 5 Sopapillas. Drizzle with 1.5 oz. honey. Sprinkle with 1 oz. cookie pieces.

Tips

Sopapillas are best when served warm.
