Denver Omelet Bites made with RITZ Crackers

Portable, popable and shareable, these breakfast bites roll classic Denver omelet ingredients in a coating made of RITZ Crackers that let you extend the fun beyond the morning meal.

Ingredients

  • Omelet Bites

  • 2 oz.ham, 1/4-inch diced
  • 1 oz.green bell peppers, 1/4-inch diced
  • 1 oz.onions, 1/4-inch diced
  • 2 Tbsp.vegetable oil
  • 6 Tbsp.liquidpasteurized eggs, divided
  • 1¾ oz.coarsely crushedRITZ Crackers
  • ¾ oz.shredded Cheddar cheese

  • RITZ Coating

  • ¼ oz.finely crushedRITZ Crackers
  • 1egg
  • 1 Tbsp.milk
  • ½ oz.coarsely crushedRITZ Crackers

DIRECTIONS
Omelet Bites:  

Saute ham, peppers and onions in oil on medium heat 4 to 5 min. or until vegetables are soft. Add 3 Tbsp. liquid eggs; scramble to a soft texture. Transfer mixture to bowl. Refrigerate until chilled (40°F.)

Add remaining 3 Tbsp. liquid eggs, cracker crumbs and cheese to vegetable mixture. Fold gently until combined. Shape into 12 (1-oz.) balls.

RITZ Coating:  

Coat each omelet ball with fine cracker crumbs, dip in combined egg and milk, then in coarse cracker crumbs. Place on parchment paper-lined sheet pan. Cover with plastic wrap and refrigerate until ready to use.

For each serving:  

Cook 3 Omelet Bites in 375°F deep fryer 1-1/2 min. or until insides are firmly set and outsides are golden brown.
