- ½ oz.caramelized sugar shards (2 pieces)

Place ice cream in sundae glass. Top with caramel sauce and cookie pieces. Place sugar pieces behind ice cream. Garnish with gold leaf.
How To Make Caramelized Sugar Shards:
Heat granulated sugar in heavy saucepan on low heat until it liquifies and becomes golden brown. Pour onto sheet pan lined with silicone mat. Cool until hardened. Break into pieces when ready to use.
