Crunchy French Toast made with RITZ Crackers

Thickly sliced and battered French Toast is coated with crunchy RITZ Crushed Crackers, then served with honey butter. The sweet and salty combination is a savory twist on the traditional breakfast or brunch offering.

INGREDIENTS

10 servings, 2 pieces each (6.7 oz.)


  • Custard
  • 6 eggs
  • 1 lb. 6.5 oz. milk
  • 1-1/2 oz. all-purpose flour
  • 1-1/2 oz. granulated sugar
  • 3/4 tsp. salt
  • 20 slices firm white bread (1-1/4-inch-thick)

  • Breading
  • 11 oz. RITZ Crackers, half coarsely crushed and half finely ground
  • 5 oz. bread crumbs
  • 1 tsp. salt

  • Honey Butter
  • 7-1/4 oz. salted butter, softened
  • 2-3/4 oz. honey
  • 1 cup maple syrup

DIRECTIONS

For Custard: Whisk ingredients, except bread, until smooth in bowl wide enough to accommodate bread when dipped.

Use 3-1/2-inch round cutter to cut out 20 circles from bread slices. Discard remaining pieces.

For Breading: Combine Breading ingredients in bowl wide enough to accommodate bread when dipped.

Dip each bread round into Custard mixture, allowing enough time for each slice to completely soak up custard. Remove from Custard, allowing excess to drip off. Immediately toss with Breading, pressing mixture lightly into bread. Arrange slices on parchment paper-lined sheet pan.

Heat oil in large skillet on medium-high heat for frying. Beginning with the first coated slices, fry 3 min. or until golden brown on both sides. Transfer to clean parchment paper-lined full sheet pan. When all slices have been fried, place pan in 350ºF standard oven. Bake 7 to 8 min. or until internal temperature registers 160ºF. 

For Honey Butter: Mix butter and honey in bowl until well blended. Store at room temperature until ready to use.

For each serving: Plate 2 prepared French Toast slices on serving plate. Top with 1 oz. Honey Butter and 1-1/2 Tbsp. maple syrup.

Tips

  • Serve with microgreens, if desired.

  • For easier soaking and breading, it is recommended that the operator make 1-1/2 times the Custard and Breading recipes.
