Honey Mustard Sauce: Mix ingredients. Refrigerate, covered, until ready to use.
Chicken Bites: Cut chicken into 1-inch pieces. Combine flour and seasonings in shallow bowl. Whisk eggs in separate bowl. Grind cracker crumbs into small pieces, as desired, and place in third bowl.
Coat chicken with flour mixture, shaking off excess. Dip into eggs, then into cracker crumbs. Arrange on parchment paper-lined sheet pan.
Bake in 375°F standard oven 10 to 12 min. or until chicken is done (165°F) and coating is golden brown.
Serve 6 Chicken Bites and with 1/4th of the Honey Mustard Sauce in a small ramekin.
