Beat cream cheese in large mixing bowl fitted with paddle attachment on medium-low speed until creamy. Add OREO Pieces; mix well.
Scoop mixture into 120 (1-inch) balls. Roll balls between palms of hands until round. Dip in chocolate.
Place in single layer on parchment-lined sheet pans. Refrigerate at least 1 hour until firm.
Variation - Raspberry Truffles:
- Prepare cream cheese mixture as directed. Stir in 1 cup seedless raspberry preserves. Roll into balls as directed; place on parchment-lined sheet pans. Refrigerate 20 min. before dipping into melted chocolate and continuing as directed.
- Prepare truffles as directed. Drizzle with melted white chocolate, or sprinkle with additional OREO Pieces, finely chopped nuts or colored sprinkles before refrigerating as directed.
